Fabio Cenni is a passionate winemaker. In the 1990s, he took over his family's winery. He selected the best vines from the old vineyards, planted new ones, and actually discovered 28 clones of Sangiovese in one of the old vineyards. On 5 hectares of land, Sangiovese grapes grow here, carefully hand-picked. The area around Chiusi is perfectly suited for viticulture. The soil is an optimal mixture of sand, gravel, and clay, and the microclimate is perfectly balanced by the nearby lake. An ancient Etruscan rock cellar provides ideal conditions for the aging of the wines. The Poggioai Chiari, the flagship wine of Fabio and Monica, matures for 36 months in large oak barrels, followed by bottle aging, and is only released for sale after seven years.
